Spring & Mulberry Coffee Date-Sweetened Dark Chocolate Bars, chopped (substitue with any essence flavor)

cups heavy cream, plus up to ½ cup more for adjusting consistency

Directions
  1. Melt chocolate with cream. Place chopped chocolate in a small heatproof bowl. In a saucepan, heat 1 ½ cups heavy cream until it begins to steam and bubble around the edges. Pour over the chocolate, cover with a plate, and let sit for 3–5 minutes.
  2. Stir to combine. Remove the cover and gently stir with a spatula until the mixture is smooth, glossy, and fully combined.
  3. Cool. Set aside until mixture reaches room temperature.
  4. Whip. Transfer ganache to the bowl of a stand mixer (or use a hand mixer) and whip until light and fluffy. For a softer, more spreadable texture, add up to ½ cup additional heavy cream while whipping until you reach your desired consistency.
  5. Use. Pipe or spread into cookie sandwiches, layer between cakes, or spoon onto crepes and tarts.
Notes
  1. Be patient when cooling — whipping too soon will cause the ganache to split.
  2. For a firmer texture (like truffle filling), skip the whipping step and chill until set.
