Serving Size: 20 truffles

Spring & Mulberry Pure Dark Date-Sweetened Dark Chocolate Bars, finely chopped

cup coconut cream (from a can, stirred smooth)

Unsweetened cacao powder, for rolling

Optional toppings: crushed nuts, edible florals, or flaky sea salt

Directions
  1. Prepare chocolate. Chop chocolate finely and place in a heatproof bowl.
  2. Heat cream. Microwave coconut cream for 1 minute, until warm but not bubbling. Pour over chopped chocolate. Cover bowl with a plate or towel and let sit 5 minutes.
  3. Whisk. After 5 minutes, whisk cream and chocolate together until smooth and thick.
  4. Chill. Refrigerate uncovered overnight (or at least 6 hours) until firm.
  5. Roll. Scoop tablespoon-sized portions of the mixture and roll into balls. Toss each in cacao powder (or other optional toppings) to coat.
  6. Finish. Garnish with crushed nuts, florals, or sea salt if desired.
Notes
  1. For faster setting, refrigerate for 2–3 hours, then freeze briefly before rolling.
  2. Swap Pure Dark for any essence bar to give the truffles a flavor twist.
  3. Store truffles in the fridge for up to 1 week.
