cups water, divided

cup powdered gelatin

cup date sugar

teaspoons vanilla extract

store-bought graham cracker squares (preferrably date-sweetened)

Spring & Mulberry Pure Dark Date-Sweetened Dark Chocolate Bars, chopped

cup fresh organici blackberries

Edible flowers (such as pansies, violets, or rose petals)

Directions
  1. Make marshmallows. Line an 8x8-inch pan with parchment paper. In a small bowl, sprinkle gelatin over 1 cup water and let sit for 10 minutes to bloom.Cook sugar syrup. In a saucepan, combine remaining 1 cup water with date sugar. Bring to a boil, then simmer for 8–10 minutes until slightly thickened.
  2. Finish marshmallow mixture. Remove from heat and whisk in bloomed gelatin until dissolved. Stir in vanilla. Pour into prepared pan and let set at room temperature for 4–6 hours or overnight. Cut into squares.
  3. Melt chocolate. Place chopped Spring & Mulberry chocolate in a heatproof bowl. Melt in 30-second increments in the microwave, stirring until smooth, or over a double boiler.
  4. Toast marshmallows. Roast homemade marshmallows over a flame (or under a broiler) until golden and gooey.
  5. Build s’mores. Spread melted chocolate on a graham cracker, top with a toasted marshmallow, a few fresh blackberries, and edible flowers. Drizzle with more melted chocolate and sandwich with another graham cracker.
  6. Serve. Enjoy immediately while warm and gooey.
