Chocolate Easter Nests

About This Recipe

Who said you can’t eat your Easter basket? These whimsical chocolate nests make a stunning centerpiece for Easter brunch — and they’re entirely edible. Spring & Mulberry Pure Dark Chocolate coats crisp vermicelli noodles, which are molded into nest shapes and filled with chocolate chunks, fruit, or florals. Simple, striking, and oh-so festive.

Ingredients
Serving Size: 8 nests
8

ounces dried vermicelli noodles

2

Spring & Mulberry Pure Dark Date-Sweetened Dark Chocolate Bars, broken into pieces

Optional fillings: chopped Embellished Bars (we love Lavender Rose), fresh berries, edible flowers

A dab of neutral cooking oil, like coconut oil (optional)

Directions
  1. Prepare nests. Flip a muffin pan upside down and cover with plastic wrap.
  2. Prepare noodles. Break vermicelli noodles into small pieces and set aside.
  3. Melt chocolate. Place chocolate in a heatproof bowl and melt gently using a double boiler or in the microwave in 30-second increments, stirring between each until smooth. Add coconut oil or neutral cooking oil to thin the chocolate, if desired.
  4. Coat noodles. Add broken noodles to the melted chocolate, stirring until fully coated.
  5. Shape nests. Working quickly, scoop chocolate-coated noodles and shape them over the inverted muffin cups to form nest shapes.
  6. Chill. Transfer the pan to the fridge for 30 minutes, or until nests are solid.
  7. Fill and serve. Carefully remove nests, then fill with chocolate chunks, fruit, or florals. Serve as a festive centerpiece and snack.
Notes
  1. Work quickly once the noodles are added to the chocolate — the mixture sets fast.
  2. For extra shine, temper the chocolate before mixing with noodles.
  3. Fill with pastel-colored fruit (like berries or citrus segments) for a true Easter look.
