Medjool dates, pitted

teaspoon vanilla extract

cup milk (dairy or plant-based)

¼

cup extra virgin olive oil (we like Brightland’s Alive)

¼

cup date syrup

¾

cup pure pumpkin purée

½

teaspoon ground cinnamon

1

cup all-purpose flour

1

teaspoon baking powder

1

teaspoon baking soda

1

Spring & Mulberry Pure Dark Date-Sweetened Chocolate Bar, roughly chopped

Whipped cream, grated chocolate, date syrup, and/or extra dates for topping (optiona)

Directions
  1. Prepare oven. Preheat oven to 350°F. Lightly oil or line a bread tin with parchment paper.
  2. Soak dates. Place pitted dates in a bowl and cover with boiling water. Let soak for 10 minutes until softened. Drain any remaining water.
  3. Mix dry ingredients. In a medium bowl, whisk together flour, cinnamon, baking powder, and baking soda.
  4. Combine wet ingredients. In a large bowl, mash soaked dates. Add pumpkin, vanilla, milk, olive oil, and date syrup. Stir until smooth.
  5. Fold together. Add dry ingredients into the wet mixture, folding gently. Stir in chopped Pure Dark Chocolate.
  6. Bake. Pour batter into the prepared bread tin. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Serve. Cool slightly, then slice. Top with whipped cream and warmed date syrup.
Notes
  1. For an everyday treat, serve warm without toppings.
  2. For entertaining, add no added sugar whipped cream, warmed date syrup, shaved chocolate , and dates.
