Date-Centered Fudge Pops

About This Recipe

Decadent, nostalgic, and entirely delicious. These creamy chocolate fudge pops are naturally sweetened with Medjool dates, with a soft, chewy date tucked into the center for a sweet surprise. Each pop is dipped in rich, dark chocolate and finished with a sprinkle of flaky sea salt, crunchy coconut, or nuts.

Ingredients
Serving Size: 8
2

cups yogurt of choice

14

Medjool dates, pitted

1

tablespoon unsweetened cacao powder

1

teaspoon vanilla extract

Pinch of salt

2

Spring & Mulberry Pure Dark bars

Optional toppings: coconut chips, chopped nuts, or flaky sea salt

Directions

1. Add the yogurt, 6 dates, cacao powder, vanilla extract, and a pinch of salt to a blender. Blend until smooth and creamy.
2. Place a whole date around the center of each popsicle stick so it will sit in the middle of the pop.
3. Pour the chocolate-yogurt mixture into each popsicle mold, filling around the date center and popsicle sticks. Freeze overnight, or until completely solid.
4. When ready to serve, break the Spring & Mulberry bars into small pieces and microwave in a heatproof bowl in 15–20 second intervals, stirring well between each interval. Stop heating once the chocolate is almost completely melted, then stir until smooth. Pour the melted chocolate into a tall drinking glass.
5. Dip each frozen pop into the melted chocolate, then place on parchment paper to allow the chocolate shell to set. While the chocolate is still soft, top with coconut chips, chopped nuts, or flaky sea salt.
Enjoy!
