cup unsalted butter

Medjool dates, pitted and halved

teaspoon vanilla extract

tablespoons date syrup

large egg

cup all-purpose flour

Spring & Mulberry Earl Grey Date-Sweetened Chocolate Bars, roughly chopped

Flaky sea salt, for finishing

Directions
  1. In a small saucepan over medium heat, melt the butter. Continue cooking, whisking frequently, until the butter foams and the milk solids turn golden brown and smell nutty, about 3–5 minutes. Add the halved dates and reduce the heat to low. Cook for 3–4 minutes, turning occasionally, until the dates are soft and lightly caramelized. Transfer the dates to a cutting board and pour the browned butter into a heatproof bowl. Let the butter cool completely.
  2. Once cool enough to handle, roughly chop the caramelized dates. Chop the Earl Grey chocolate into chunky pieces.
  3. Heat the oven to 350°F. Line a baking sheet with parchment paper.
  4. In a large bowl, whisk together the egg, date syrup, and vanilla. Slowly whisk in the cooled browned butter until smooth and glossy.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Fold the dry ingredients into the wet ingredients until just combined.
  6. Gently stir in the chopped caramelized dates, and chopped Earl Grey chocolate.
  7. Scoop the dough onto the prepared baking sheet, leaving about 2 inches between cookies. Bake for 8–12 minutes, until the edges are lightly golden and the centers still look slightly soft.
  8. Sprinkle with flaky sea salt while the cookies are still warm. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
